I hate the hole in the center, and went looking for information on how to take out the mixer paddle. On the gluten-free setting, it has a 2-minute cycle, immediately followed by an 18-minute cycle for kneading. It does not have a rise cycle. All the rising is during the baking cycle. So right after the 18-minute cycle, the paddle can be taken out, from what I understand. YMMV, but I wanted to share this info. It would be nice if they would add a buzzer when it's time to take out the paddle, but not too hard to set a timer. I've used the Bob's Red Mill mixes for raisin and white bread so far and the loaves are bigger than the tiny ones you get from store bought GF loaves that cost a fortune anyway. This way I don't have to stock a bunch of different flours that are prone to go rancid. I still toast the bread before eating or making sandwiches, but I'm happy with it and it's quite easy using the mixes. Just whisk together 3 liquid ingredients and add mix then the yeast on top.
