In this book, I want to try ALL of them. I cook every single day, so even though I haven't cooked all these recipes yet, I know they will turn out really good just by reading through the recipe. So far I have tried the Creamy Baba Ganoush (I added one clove of raw garlic and then topped with chopped fresh mint and parsley,) and Daniel Holzman's chopped veg.Each recipe is gluten free and soy free which makes that much better. I think this kind of talk is negative. You just cannot be body positive about yourself while putting down other body types. I'm a big girl and I believe all body types are great.I'm a vegan, my partner an omnivore, and the rest of my circle is a mix of gluten-free folks, cheese-loving vegetarians, meat obsessives, and on and on. Btw if you have a Vitamix or another high speed blender go ahead and make your own Brown Rice Flour its super easy and inexpensive. I also made the Spicy Broccoli Rice and this week I plan to make the Chilaquiles with Cilantro Cream and the Nutty Banana Smoothie. So delicious but be sure to adjust the cream and the Chilaquiles with a bit more salt and lime if needed. As Jessica explains she doesn't use much salt. When the book arrived, I found it aesthetically beautiful and loved that Jessica weaved story throughout her book. The pantry essentials section really helped me to identify some healthier alternatives to my existing pantry staples, several of which I've already incorporated as regularly stocked items. Then, there's the recipes. Besides being fantastic, they are very approachable, with a reasonable number of ingredients and limited prep time. A few of my favorite recipes are Crunchy Chunky Granola; White Bean Buffalo Hummus; Za'Atar Swirl Bread; Roasted Carrots with Pesto; Quinoa Taco Salad; Black-Eyed Peas and Greens; and Chocolate Chunk Cookies. I've made most of these several times. My husband, whose preferences are certainly not plant-based, has enjoyed these meals and even has a few favorites of his own. One of the things that I love about Jessica's approach is her willingness to share what's worked for her, in hopes that it may help others. Without pushing her lifestyle on anyone else or making proclamations of the health outcomes of a plant-based diet, she simply invites you to make room for some plant-based meals into your life each week by offering an accessible path forward. My husband and I already cook a lot of vegetarian meals and very rarely eat red meat, so I was primarily looking for more healthy, vegetarian meal ideas. It turns out, that's a great reason to pick up this cookbook. The first thing I always notice in a cookbook are the pictures. In this book, there are full-page pictures for about 1 in 3 recipes. Ideally, I'd like a picture for every recipe, but many of these recipes were straightforward enough that I felt like I knew what I was getting even without a picture. The organization by category makes a lot of sense. Most recipes called for only a handful of ingredients and all three of the recipes I tried were incredibly straightforward. A few called for 'odd' ingredients (by which I mean ingredients I couldn't get at Walmart), but I was easily able to find substitutes (quinoa for amaranth, for example). I have yet to make a dinner from this book, but the list I'm excited about is long - Mexican fried rice nachos, corn cakes with black bean spread, white bean pepper chili. I could go on! And I will try to come back and update once I make these. In the meantime, here are the recipes I did make: Creamy peach porridge - This was amazing. It was precisely as sweet as I like my breakfast foods to be. The only ingredients were vanilla extract, coconut milk, cinnamon, peaches, maple syrup, and amaranth (that I replaced with quinoa). It could probably be healthier, but not bad given how decadently delicious it was. We'll be making this again this weekend. Herb fries - Before trying this recipe, I had never found homemade or frozen fries I enjoyed. My husband and I agree that these were by far the best homemade fries we've had. I forgot to add the rosemary and parsley to make them herb fries, but they were perfect. I can't wait to make them again and add these herbs or cover them in Parmesan or garlic or maybe truffle oil for a treat. They'd be the perfect base for any seasonings you might want to try. Honey peppermint cups - Another recipe that blew me away. Really just honey, dark chocolate, and peppermint extract. My husband loved these just as much as I did and he's not a huge fan of mint. I, however, am obsessed with all things mint and chocolate, so if anyone else wants me to review a book that requires me to eat something this delicious, bring it on. Even not having tried a main meal, I'm completely sold on this book. Everything was easy to make and incredibly delicious, especially given the simplicity of the ingredients. Highly recommend. The author describes how changing the way she ate to plant based helped her recover from severe pain and endometriosis. She does not preach to the reade Typically, I will check a cookbook out of my local library, make a few recipes and if I like what is on the plate I will purchase the book for myself. She does not preach to the reader that they must eat a plant based diet but instead encourages you to experiment and find the foods that make you feel your best while aiming to have one meal a day that is plant based. The way she writes is with humor and kindness and I felt as if she was a friend, applauding me for wanting to do what is best for myself. The photography is beautiful and the recipes are not complicated. The author sprinkles advice throughout the book about how to eat plant based in situations where it may be difficult. I am already planning to make several of the recipes including Orange Basil Shot, Crispy Ice Cream Bars, White Bean Pepper Chili and the Tomato and White Bean Panzanella. Ehh who am I kidding I will be making them all!! Eating should be fun and delicious as well as healthy, she maintains, and her recipes provide a very doable path to achieving that. For those with more experience, there are also some more complex and interesting recipes to try, like Roasted Carrots with Sprouted Lentil Tabbouleh, Creamy Mushroom Lasagna, and a non-dairy version of Saag Paneer. The dessert section looks particularly scrumptious, with some creative combos like Almond Butter and Blueberry Cookies and Honey Peppermint Cups. All the recipes are gluten-free, but nuts are used plentifully. She provides information on the health benefits that may be experienced from taking such a step, and also on such topics as eating plant-based in social situations or in restaurants. You can easily skip these portions, if you just want to cook, or you can sample them at will according to your areas of interest. Her engaging and nonjudgmental style makes her easy to relate to, and her enthusiasm is infectious.
