Grove (errantdreams) 4.0 out of 5 stars This isn't an exhaustive cookbook; it's meant to give you the how-to and provide a handful of samples in different areas, such as meat pizzas, vegetable pizzas, breakfast and dessert pizzas, and then a similar array of panini. The directions are quite thorough, and include many little tips along the way. For instance, one section refers to a previous one to provide benchmarks for how the doughs should appear once kneaded. Unfortunately, that other section tells you to view photos at a URL that no longer exists. The good news is, the recipes are delicious and easy. I enjoyed the various pizza doughs we made from Sherman's recipes, as well as the homemade pizza sauce. There's a 'Tuna Meltdown Panino' in here that combined such ingredients as tuna salad, gouda, and avocado to wonderful effect (a bit tough to flip thanks to that tuna salad, but so delicious it's worth it). The recipe instructions are clear and easy to follow, although there are no photos (not a big deal with most parts of making pizza and panini, but I know they're important to some folks). After that, however, I think you'll find it so surprisingly easy to make your own pizzas that you'll be tempted to do it every week!He is not looking for cooks who instinctively avoid yeast. He feels crusts are simple, ten of them, and he shares his years of well-learned tricks for simple success. Global is especially interesting, for he gives recipes from nine cultures: from Indian to Scandinavian, Middle Eastern to Russian. What a great start for some unusual entertaining. Sherman's Panini recipes run from the Ruben to the Oyster Po'Boy, a Tuna Meltdown and many more. These are followed by his Plant-Filled (vegetarian) Paninis. He internationalizes these too, specifying which of his nine bread doughs work best. Crusts on either the pizza or the Panini need the correct textures. With mixed grains, he advises making a porridge of these grains with water, then add the porridge mixture to the flour when you add the other ingredients. Sherman's all for using a large, unglazed ceramic tile as pizza stone. Pizza, a life quest. Well, odds are that you do - on the average, Americans eat 23 pounds, or 43 slices, of pizza per year. So what do those 43 slices consist of. Pepperoni, extra cheese, maybe anchovy if you're daring. But that's not all pizza can be. America's favourite food has a varied background-probably more than you realize. There are tons of interesting flavour combinations and styles out there, from traditional to gourmet, from Sicilian to French... and don't even get me started on the possibilities of using other grains or cooking methods for the crust. But put down that phone. Not even the most amateur cooks have to rely on delivery for great pizzas and grilled sandwiches. All you really need is The Complete Idiot's Guide to Pizza and Panini. It’s so much morethan the average sandwich, and extra care goes into making areally great panini, with its flavorful fillings, melted cheeseand crispy rustic bread—extra points for grill markings! Once this styleof sandwiches made its way over to the UnitedStates, we began grilling them (sometimesusing cast-iron pans or foil-wrappedbricks to press down the bread). Eventually, commercial panini presses madetheir appearance, and it became easierfor everyone—restaurateurs andconsumers—to make their ownpressed culinary delights. You usually don’tneed an extensive list; a couple of meatyselections as well as a veggie choiceshould do the trick. Your options are virtuallyendless; try different flavor combinationsusing meats and vegetables, anddifferent sauces and oils, and taste-testthem with your staff before adding themto the menu. Manypizzerias add these wonderful gems tothe menu and then never tell anyone. Yes,they still get ordered during the lunchtimerush when patrons feel like eatingsomething other than pizza, but why notput some effort into promoting the itemsyou’ve spent precious time creating. Thiscould be as easy as placing a blackboardat the front of the store or a note card ineach menu announcing a “Panini of theDay.” Why not send an email blast to yourcustomers announcing the new additionto the menu, or print a coupon in your localpaper for a free soda with every paninipurchased. You could even start a paninisandwich club, punching a card each timecustomers order a panini and then givinga free one when they reach 8 or 10. It couldmean the difference between selling 10panini per week and 25. Don’t think of itas taking away from your pizza sales, either, because plenty of people out theremay not feel like pizza today—but theycould sure go for a panini! Powered by Web Publisher PRO. Visit Erik Sherman’s food blog. These are fabulously versatile foods that allow you to combine a wide array of bread products with virtually limitless toppings. You might not be sure where to start, however, if you want to make them at home; many people think they’re limited to takeout, restaurants, and frozen pizzas. It’s part how-to guide and part recipe book. This isn’t an exhaustive cookbook; it’s meant to give you the how-to and provide a handful of samples in different areas, such as meat pizzas, vegetable pizzas, breakfast and dessert pizzas, and then a similar array of panini. Unfortunately, there are also a few missing bits of information. For example, the section on using a stand mixer to knead your pizza doughs says, That information should have been in the book, and the author shouldn’t have put a URL repeatedly into the book with promises of extra content there if he was going to take it down again before even a single year had passed. I enjoyed the various pizza doughs we made from Sherman’s recipes, as well as the homemade pizza sauce. The recipe instructions are clear and easy to follow, although there are no photos (not a big deal with most parts of making pizza and panini, but I know they’re important to some folks). You’ll want to read through the extended version of the directions for pizza dough and the like at least once. After that, however, I think you’ll find it so surprisingly easy to make your own pizzas that you’ll be tempted to do it every week! When I discovered the slideshow feature at photobucket (so I wouldn’t have to choose a single photo or try to awkwardly fit a bunch of them into one review), I knew I was a goner.Hopefully the author will fix his mistakes at some point! I will take a tuna sandwich pre-panini or post-panini anyday! ?? I try not to keep it in the house or I’ll eat way too much of it. ?? They really do add something to the cookbook reviews. I think they’ve definitely added a lot to my cookbook reviews since I got my camera. Learn how your comment data is processed.
