Freezing Time and Bowl Preparation The freezer bowl must be completely frozen before you begin your recipe. The length of time needed to reach the frozen state depends on how cold your freezer is. For the most convenient frozen desserts and drinks, leave your freezer bowl in the freezer at all times. You can take it out any time for immediate use. In general, freezing time is between 6 hours and 22 hours. To determine whether the bowl is completely frozen, shake it. If you do not hear liquid moving, the cooling liquid is frozen. Before freezing, wash and dry the bowl. Wrap it in a plastic bag to prevent freezer burn. We recommend that you place the freezer bowl in the back of your freezer where it is the coldest. Making Frozen Desserts or Drinks Use Cuisinart recipes included in the Instruction Booklet or use your own recipe, making sure it yields 2 quarts or less. The ingredients will increase in volume during the freezing process. For best results, prepare the ingredients in a container from which it is easy to pour. Remove the freezer bowl from the freezer and place on the center of the base. Place mixing bowl arm in freezer bowl. Arm does not fit tightly. It just rests in the center of the bowl, with the circle side facing up. Place lid on the base. Frozen desserts or drinks will be done in 25-35 minutes. The time will depend on the recipe and volume of the dessert or drink you are making. When the mixture has thickened to a soft serve consistency, it is done. If you desire a firmer consistency, transfer the dessert or drink to an airtight container and store in the freezer for two or more hours. Adding Ingredients Ingredients such as chips and nuts should be added about 5 minutes before the recipe is complete. Once the dessert or drink has began to thicken, add the ingredients through the ingredient spout. Nuts and other ingredients should be no larger than a chocolate chip. I like the 2 quart size for those reasons, If you've never owned one of these types of ice cream makers before, here's an overview. There are two main parts as far as what makes the ice cream. There is a paddle and a drum, aka the freezer bowl. The night before you intend to make ice cream (or earlier) park your clean freezer bowl in the coldest part of your freezer overnight. This is essential that the bowl be frozen through with no sloshing sound. This drum is what chills the ice cream. When you're ready to make the ice cream, put the frozen freezer bowl into the base of the ice cream machine, put the paddle in and put the top on, start the machine and then pour your cold (repeat COLD) ice cream mixture into the freezer bowl as it runs. The cold of the freezer bowl chills the ice cream mixture, the paddle scraps the sides of the freezer bowl as it turns which scrapes off the freezing ice cream incorporating it back into the ice cream mixture and churns air into the mixture. Let the machine run for 20ish minutes. Give it a peak every once in a while because watched ice cream never freezes;). When it's done, you'll hear the motor struggle a bit more because of the thickness of the ice cream, the ice cream will be soft serve consistency and will be done as far as its adventure with the machine. From here you could eat it as soft serve, or scoop out the ice cream into a freezer safe container and freeze it for a few hours.The negative comments that people have left seem mostly to be due to them not understanding how this machine works or that they expected something different, or both. Yes, you have to freeze the bowl overnight -- that's how this type of ice cream machine chills ice cream. It doesnt have its own refridgeration unit. No, this machine doesn't produce solid hard ice cream -- it produces soft serve consistency because it churns and you can't churn rock solid ice cream. And You MUST WASH THE FREEZER BOWL BY HAND. You can tell that a well meaning relative put your bowl in the dishwasher because the bowl will still sound sloshy even though it's been freezing for days. The It Never Froze My Ice Cream comments -- the person either put their freezer bowl in the dishwasher or the bowl wasn't cold enough. Or the freezer bowl was defective. The It Won't Make Ice Cream Immediately, It Makes Soft Serve.comments -- that's true, but that's how this machine works. Some have commented that they have to let the finished ice cream (after being I the freezer) sit on the counter for 15 minutes until they can scoop it. You may notice that the same volume of two different brands of ice cream weigh differently. Ultra premium brands like Haagen Daaz have little overhead compared to, say most grocery store brands. Lower quality ice creams also have thickeners and stabilizers that hold the ice cream together but keep it from really forming solid. Ever leave a bowl of ice cream on the counter overnight and the next day it's a little melted but mostly in the same shape. That's the stabilizers. All of this makes commercial ice cream soft and easy to scoop even though it's frozen. Take heart that better quality ice creams like the one you are making are naturally harder when frozen, and therefore may take a sturdy ice cream scoop and perhaps a little muscle to scoop. On properly made ice creams (enough fat, enough churning) I've never made a batch too hard to scoop straight from the freezer. In short, this machine works beautifully and its make quality ice cream. I'm very happy with it.I had been looking into getting one for a while and was suckered into getting this one from all of the positive reviews. I'm happy to report that I was not disappointed. The machine is a little noisy, but that's the only drawback that I can really think of. The first ice cream we tried to make was a twist on Ben n Jerry's Cherry Garcia ice cream made from real cherries and dark chocolate chips. The ice cream froze well and was absolutely delicious. Since then we've also made blueberry cheesecake with a graham cracker twist running through it and a chocolate brownie that didn't last two nights. We usually store the ice cream in a glass loaf pan for easy scooping or in recycled Talenti containers for easy portion control. Either way, it makes fantastic ice cream that you can make as healthy (or unhealthy!) as you want, and overall it's much cheaper than constantly buying pints of ice cream in the store. Definitely worth the price and I would definitely recommend it.It never moved past cold liquid and I assumed perhaps I did something wrong, even though I followed all directions to the letter. I tried again over Thanksgiving and again - cold liquid. Both times once the liquid is in the freezer, it actually freezes. They turned hard as rocks. The second time, I cut them smaller, sprinkled them with sugar and let them sit for half an hour till they were somewhat syrupy, then poured them in during the last five minutes. That was much better. Incidentally, I reduced the sugar in the ice cream mixture by an equal amount so as not to add more sugar to the overall dessert. Question: What would be the smallest batch you recommend. Answer: As I have made only full batches, I cannot give you a knowledgeable answer. We plan on leftovers and put any we don’t eat immediately into freezer-safe containers and store in our refrigerator’s freezer for enjoying another day. I recommend contacting your ice cream maker’s customer service and talking with them about making smaller batches. Question: How long do you freeze the slurry mixture before pouring it in the freezer bowl for the Cuisinart ice cream maker. Answer: Please don’t freeze the slurry before putting it in the ice cream maker. If you have the same ice cream maker I have, then see Step 3 In the section titled “How to Make Ice Cream in Five Easy Steps,” or follow your ice cream maker manufacturer’s instructions. For my maker, as noted in Step 3, the slurry must be chilled in the refrigerator for at least an hour, and can be chilled up to 24 hours. Question: Can you use almond or coconut milk to make ice cream with the Cuisinart machine. Answer: I have not tried them, but I did do a web search and found this recipe that uses both: Question: Do you have a recipe for a chocolate malted milk ice cream with chopped malted milk balls in it. Answer: No, but I’d try that in a minute if I could find some organic, Fair Trade chocolate malted milk balls. I miss eating those out of hand. They’d be wonderful in ice cream, wouldn’t they. I’d chop them coarsely and add them in the last five minutes, as I do other ingredients, and see what happened. Question: I tried the vanilla recipe in the booklet included with my purchase. I find the recipe leaves a filmy after taste. Not sure why or if I’m the only one experiencing this with my Cuisinart Ice Cream Maker. Answer: I’ve not experienced anything like a filmy after taste with my vanilla recipe, which is similar to the Cuisinart recipe that came with my now-old machine’s manual. My recipe contains slightly less sugar than theirs. Also, I use whole milk and heavy cream which contain no additives, but some producers add glycerine or carrageenan to their cream. I wonder if those might leave that filmy taste you mention. Question: Can I use dry milk. Answer: I have not attempted making ice cream with dry milk. If you try it, do come back and let me know how it goes, won’t you. Question: How would you make ice cream recipes more sugar-free. Answer: We like real sugar in our ice cream so I have not tried sugar substitutes. Two-thirds of a cup is what works for us. I have experimented with using less, but always come back to this measurement. I may try substituting raw agave syrup for sugar sometime, as it is said to have a lower glycemic index, but I haven’t done so yet. Question: Can you substitute skim milk for whole milk when making ice cream. Answer: I imagine you could. Early on, I tried replacing the cream with whole milk. I also tried increasing the whole milk portion and decreasing the cream portion accordingly, but we didn’t like it much. This ratio of cream to milk is the only one that satisfies our taste buds. This way we get the creamy smoothness and flavor of real ice cream with fewer heavy cream calories and a little more milk protein. If you don’t need all that creaminess, skim milk might work for you. With no fat, you might have problems with ice crystals forming, but that’s just a suspicion on my part. I have no experience to back it up. Question: How do you make ice cream that is dairy free with the Cuisinart ice cream maker. Can you use almond milk or cashew milk. Mary Catton on August 22, 2019: I just made my first batch with fresh Colorado peaches. It took less than 20 minutes to freeze and the consistency was a delicious soft serve. I packed the rest into a container for the freezer. My only problem was after about 12 minutes, the ice cream mixture expanded over the top of the freezer bowl and down the sides. I used the recommended amt of milk and cream, but perhaps added too many peaches. Nevertheless I’m very happy with the results.
