SPECIAL CORD SET INSTRUCTIONS A short power -supply cord is provided to reduce the risks resulting from becoming entangled in or tripping over a longer cord. Longer extension cords are available and may be used if care is exercised in their use. If a long extension cord is used, the marked electrical rating of the extension cord must be at least as great as the electrical rating of the appliance, and the longer cord should be arranged so that it will not drape over the countertop or tabletop where it can be pulled on by children or tripped over. NOTICE This appliance has a polarized plug (one blade is wider than the other). T o reduce the risk of electric shock, this plug will fit in a polarized outlet only one way. If the plug does not fit fully in the outlet, reverse the plug. If it still does not fit, contact a qualified electrician. Do not modify the plug in any way. W e sugge st you save all packin g mate ria ls in the event th at futu re shipp ing of the machi ne is nee ded. Keep all plast ic bags away fr om chi ldr en. The water flow can be adjusted by varying the pressur e with which the coffee is tamped (pressed down) in the filter or by altering the grind of the coffee. If the speed of the water flow is too slow, the coffee will be over - extracted and will be very dark and bitter, with a spotted and uneven crema (froth) on the top. If the speed of the water flow is too fast, the coffee will be under -extracted and the supreme flavor will not develop. The coffee will be diluted and there will be an inadequate amount of crema on the top. Ele ment 2: Cof fee While the bulk of the liquid is water, all of the flavor should be from the coffee. T o achieve the same great quality of coffee you receive at a cafe, you need to use the same quality beans. If you choose to grind your own beans, buy the beans fresh and whole, only about a two-week supply at a time for maximum freshness. Once the coffee bean is broken, its flavor degrades very quickly. If it is not practical to buy smaller supplies, we recommend you separate larger amounts of beans and store them in airtight containers in a cool, dry area. They should not be kept for longer than 1 month as flavor will diminish. Do not refrigerate or freeze coffee beans. Ele ment 3: Grind The grind of the coffee is critical for proper flavor extraction. If the grind is too fine, over -extraction and bitterness will occur with a spotted and uneven crema on the top. If the grind is too coarse, the water will pass through too rapidly and there will be an inadequate amount of crema on the top of the espresso. Ele ment 4: T amp ing the Cof fee Gr oun ds If you choos e to use gr oun d espr esso inst ead of pod s, tamp ing the cof fee is a ver y impor tan t par t of the cof fee maki ng pr oces s. Use the sco op supp lie d to fill the filte r bask et, th en usin g the tampin g tool (flat end of the mea suri ng sco op), tamp (pr ess down ) down th e gro unds wit h moder ate pres sur e. Add mor e cof fee and tam p again if neces sar y to bring cof fee to le vel. Do not overf ill the filte r baske t. The grou nd cof fee shou ld be tamp ed wit h mode rate pr ess ur e. Discar d the used cof fee gri nds or po d fro m the fil ter bas ket (19). GUIDE TO MILK TEXTURING Mil k textu rin g is the ste amin g of mil k. The steam doe s two thi ngs; it heats the milk and mixe s air with the mil k to form a cr eamy textu re.With the st eam wan d posit ion ed over the dri p tray, acti vate the ste am func tio n by turnin g the functi on kno b to the ste am sett ing (20). Onc e any wat er has bee n pur ged, st op the ste am by turni ng the functi on kno b to the off po siti on (21 ). 4. Swin g the ste am wand to the side of the espr ess o mac hine (22). 5. Plac e the ste am wand into the milk so tha t the noz zle is abo ut a half -inc h belo w the surfac e and act iva te the ste am func tio n by turni ng the functi on kno b to the ste am sett ing (23 ). 6. Angl e the pit cher so that the ste am wand is res ting on the spout of the pitch er and low er the pi tche r unti l the tip of the steam nozzle is just bel ow the su rfac e of the mil k. This will sta rt to cr eat e a whirl pool act ion in th e milk (24 ). If this is hap peni ng, raise th e pitch er so tha t the ste am noz zle is lo wer ed far the r into th e milk. 7. As the stea m heats and text ur es the milk, the level of the milk in the pitch er wil l begi n to ris e. As thi s happe ns, follow the leve l of the milk by low erin g the pit cher, alway s kee ping the tip of the steam nozzl e just bel ow the su rfac e. 8. Once the foam is cr eat ed, rai se the pi tche r unti l the ste am nozz le is in the cen ter of th e milk (25 ). TIP: The amou nt of foa m r equi re d will vary dep endi ng on the drink s being made; for exam ple, a cap pucc ino requ ir es mor e foam than a latt e. 9. Sto p the ste am imme dia tely whe n the mil k is heate d by turni ng the functi on kno b to the off pos iti on (26). IMP OR T ANT: Do not boil the milk. 10. Remove the pitc her, imm edia tel y wipe the ste am nozz le and wand wit h a clean damp clot h (27 ) and pur ge a small amo unt of st eam.Nev er imme rse unit in wat er or oth er liqu id. T o cle an, sim ply wipe wit h a clean da mp clot h and dry befor e stor ing. The inside of the brew head should be wiped with a damp cloth to remove any coffee particles. Do not use any scouring agents or harsh cleaners. Use a non- abrasive washing liquid. NOTE: Do not clean any of the parts or accessories in the dishwasher. DECALCIFICA TION Decalcification refers to the removal of calcium deposits that form over time on the metal parts of the coffeemaker. For best performance from your espresso maker, decalcify the unit from time to time. The frequency depends on the hardness of your tap water and how often you use the coffeemaker. T o clean, fill the water reservoir to capacity with a mixture of 1? 3 white vinegar and 2? 3 water. Be sure the power button is in the off position, and the unit is unplugged. Remove the portafilter holder. Pour the decalcifying agent into the water reservoir, plug the machine back in, and power the unit back on. Set the power button to on and the function knob to the off position. Place a lar ge container under the brew head and steam wand. When brewing temperature is reached, the heating light will switch off. Set the function knob to the espresso position (show icon of espresso cup) and let half of the solution run through the brew head. Set the function knob to steam position and allow the remaining solution to run through the steam wand. When the solution stops running, set the function knob back to the off position. After decalcifying, let one cycle of fresh cold water through the unit before using the unit again to brew coffee. 2 9 3 0 Spoon the espresso grounds into the basket filter. Using the tamping tool, lightly press down on the grounds and clean any excess from the rim. When the machine is heated and ready to use, the amber heating light will go out. Secure the portafilter holder in place. Place a demitasse cup underneath the brew head and turn the function knob to the espresso setting. Espresso will begin to brew. When 1 ? ounces have been brewed (after about 15 seconds), turn the machine off. Spoon the espresso grounds into the basket. Place one mug or glass underneath the brew head and turn the knob to the espresso function. Follow the same instructions for the Doppio, but place two demitasse cups under the brew head instead of one. Place the one-cup filter basket in the portafilter holder. Spoon the espresso grounds into the filter. Secure the filter holder in place. Place a 6 to 8 ounce glass or mug on the drip tray underneath the steam wand. Espr esso con Panna Mak es 1 s er vin g (1.Spoon the espresso grounds into the basket. Using the tamping tool, lightly press down on the grounds and clean any excess from the rim. Secure the portafilter holder in place. Place a demitasse cup underneath the brew head and turn the function knob to the espresso function. T ake whipped cream out of refrigerator and spoon about 1 tablespoon on top of espresso. Espr esso Macchiato Mak es 1 s er vin g (1.When the machine is heated and ready to use, the amber heating light will go out. Pour the milk into the pre-chilled frothing pitcher. Hold the pitcher in one hand and place under the steam wand so the bottom of the wand is just below the surface of the milk. While holding the pitcher at an angle, allow the steam to move the milk around. Once the milk begins to increase in volume, lift the pitcher higher so the steam wand is immersed farther into the milk. Move the pitcher up and down a couple of times to achieve a nice foam. When the foam has almost reached the top of the pitcher, tur n the espresso maker off. T ur n the espresso maker back on. Wait for the amber heating light to go out, if necessary. When 1 ? ounces have been brewed (after about 15 seconds), to turn the machine off. Using a lar ge spoon, spoon one tablespoon of the frothed milk on top of the espresso. Espr esso Breve Mak es 1 s er vin g (3. Place one demitasse cup underneath the brew head and turn the function knob to the espresso setting. Espresso will begin to brew and when 1.Place in microwave on high for 1 minute. Pour the espresso into the same mug. Place the one-cup filter basket in the portafilter holder. Using the provided tamping tool, lightly press down on the grounds and clean any excess from the rim. Place one cappuccino cup or glass underneath the brew head and turn the function knob to the espr esso setting. Cafe Mocha Mak es 1 s er vin g (6 o un ces ) 4 ounces skim milk 1 measured scoop finely ground espresso or 1 espresso pod water 1 tablespoon chocolate syrup.Place the one-cup filter basket in the portafilter holder. Spoon the espresso grounds in the basket. Wait for the amber heating light to go off again, if necessary. When 1 ? ounces have been brewed (after about 15 seconds), turn the machine off. Add the espresso and chocolate syrup. T op the drink off with about 2 tablespoons of the whipped cream. If desired, top with shaved chocolate or cocoa powder. Cool to room temperature. Cover with plastic wrap and place in freezer. At every hour, for about 5 hours in total, scrape the mixture with a fork to allow crystals to form. Over medium-low heat, gradually bring the milk to a boil. T ur n the burner off and stir in the espresso beans. Let steep for 15 to 20 minutes. Strain; discard beans.
